This stuff is the perfect breakfast, very good with a typical rice meal and even works well in a sandwich. Its also the most commonly ordered item at bars coz its perfect with a chilled beer.
Shallots or red onions – diced
Curry leaves – a few, chopped very thin
Tomatoes – diced and de-seeded
Green chillies – a few, finely chopped
Shredded coconut – a couple of spoons
Salt and pepper
Method: Mix all the ingredients in a bowl, heat a seasoned frying pan or skillet, add some oil and when the oil is hot pour in the egg mixture. Turn down the heat after a minute and then when one side has browned lightly, flip over and turn off the gas. Best served with a glass of chilled beer
